We named this collection “6000 B.C.” after this remote date, which marks the beginning of some of these ancient winemaking methods.

These wines represent a pure and innovative approach, minimally processed and truly natural for today. It’s a fascinating journey into the past, a true reconnection with our ancestral roots.

Pét-Nat white

Pétillant Naturel, or Pét-Nat, is an ancient winemaking method that predates Champagne. The wine is bottled before it has finished its first fermentation, ending it in the bottle where it releases a natural gas. It therefore has no added preservatives such as sulphites.

Aroma ranging from floral notes to tropical fruit and bread yeast. Light and refreshing, with a fine, persistent bubble. Pair with seafood or sea bass rice, grilled ribs with lemon sauce.

Pét-Nat rosé

Our secret lies in the exact point of bottling. There is often some turbidity in its appearance, but always with a soft and delicate bubble, characterizing this wine with its fruity, youthful and refreshing appeal. It’s a drink between beer and sparkling wine, which seems to be born happy and with a great feeling of pure freshness!

The nose is reminiscent of red fruit jam and strawberry candy. The palate is refreshing, greedy with fine, persistent bubbles. Aromatic dishes will pair well: shrimp or chicken curry, fish with rosemary and thyme in the oven.

Alvarinho Tanning

This is a unique wine, obtained by curtimenta, an archaic process that was already mastered by the Romans.

The grapes ferment in contact with the skins, pips and the rest of the plant, using wild yeasts, for a period of 15 days. Hence the golden color. The wine is then aged in oak barrels for 12 months and a further 6 months in the bottle before being sold.

Lovely notes of ripe apricot and quince, with hints of honey and dried fruit. The notes of evolution and the tannin of the Curtimenta give it extraordinary complexity, structure and unctuousness. A white that will surprise you with a good sheep’s cheese, roast veal or cuttlefish stew.
