PET-NAT is short for "pétillant naturel", a French expression for "natural effervescent" or "natural sparkling wine". After harvesting, the wine is gently pressed and then allowed to ferment by indigenous yeasts. However, before fermentation is complete, the wine is bottled, thus completing the fermentation of the sugars in the bottle and releasing carbon dioxide, which is responsible for the presence of effervescence.
